Todos Santos is a small town in Huehuetenango, located in one of the highest areas of Guatemala called Cordillera de Los Cuchumatanes. It has a unique microclimate, created by warm updrafts from the plains of Tehuantepec mixing with the cooler air descending from the Cuchumatanes Mountains, fostering high-quality coffees. In this region, it’s common for farms to grow, harvest, and process their own coffee, usually 20-30 bags per year.
This particular lot comes from a single farm owned and operated by Héctor Pablo and produced from 100% Red Bourbon variety. It is fully washed and fermented for 72 hours in cold water, before it is dried in direct sunlight for 10 days. This Grand Cru from Héctor is nuanced with citrus, stone fruit, and sweet caramel, we think it makes perfect hot drip as morning temperatures start to dip!
