Todos Santos is a small town in Huehuetenango, located in one of the highest areas of Guatemala called Cordillera de Los Cuchumatanes. It has a unique microclimate, created by warm updrafts from the plains of Tehuantepec mixing with the cooler air descending from the Cuchumatanes Mountains, fostering high-quality coffees. In this region, it’s common for single producers to grow, harvest, and process their own coffee: usually 20-30 bags per year.
This lot comes from Don Hector, one of the producers in this community; by separating these lots, the production practices of the individual producers are placed in the spotlight. It’s clear after brewing this coffee that Hector is thoughtful and precise with his methods, leading to a clear cup full of rich chocolates and sweet stone fruit.
