Hailing from the historical municipality of Timaná, Colombia, this coffee is produced by families whos lineage in Timaná goes back to the rebellion against Spanish invaders in the 16th century. Their experience is enhanced by the natural resources of the area – on one side of the region is the Andes Mountains, and on the other two sides, the Magdelena and Golden Rivers. The small, independent farms have produced some excellent coffees, including this offering.
It is fully washed before being dry-fermented on parabolic patios and raised beds for more than 26 hours. It is then screen sorted for quality using screen size 15+. The resulting quality is apparent in its pastry sweetness and mellow, buttery apple acidity. This coffee has us thrilled for the offerings to come out of Colombia this season!
