The Ija’tz cooperative is a community processing station run by indigenous Maya KaqchikelTz’utuhil families. They are devoted to reversing the effects of erosion and flooding caused by deforestation in the area. It is a small cooperative, consisting of 50 farmers, 20 of which are women.
Lake Atitlan is one of five volcanic regions in the country, which causes nutrient dense soils perfect for growing coffee. This lot is a wonderful offering from Ija’tz, spotlighting the good growing conditions, and careful production. It is syrupy sweet, with an easygoing acidity and a fudgy rich mouthfeel. Naturals out of Guatemala are hard to come by, and this coffee is as great an example of natural processing as it is of Guatemalan coffees.
