This coffee totes many of the telltale signs of a great Burundi coffee, from the story of its processing to its flavors in the cup. Nearly 3000 small producers (some just growing in their backyards!) provide coffee to Butegana, the oldest processing station in Burundi, where the fruit is tested for ripeness, carefully dried for 3-4 weeks to a moisture content of 11.5% (?), and meticulously sorted to remove defective or poor quality beans.
Burundi’s requirement of producers to grow exclusively Red Bourbon coffee leaves them with challenges; but overcoming those and the quality control in Butegana produces a coffee that is at once characteristically Burundian, and excitingly delicious.
